French Silk Pie

This is what happens when French Silk Pie hits you between the eyes.

Traditional French Silk Chocolate Pie consists of melted chocolate, heavy cream and eggs whipped with vanilla and sugar  into blissfully smooth ribbons of custard. It’s so good but sometimes, sickeningly rich.

I set out to create a version of my childhood favorite.

Throughout the blog world, I’ve seen numerous custard recipes that use tofu as a thickener, so that seemed like a good first step. Heck, it turned out to be one of only three (excellent) steps!

The result is a dense, rich pie without the pudge. It’s unbelievably easy to make and only requires 3 ingredients, unless you want to use a homemade pie crust.

3-Step French Silk Pie
1 (12.3 oz) package lite silken tofu
1-1/2 cups dark chocolate chips
1(9-inch) pie shell, baked
1.) Melt chocolate in a double boiler (or using a bowl over a pot of simmering water) or in the microwave.
2.) Add tofu and blend with an immersion blender until thoroughly integrated.
3.)Pour mixture into the pie shell and chill for at least three hours. (I put mine outside on the deck when it was 20-degrees F)


*For gluten-free, use a GF pie crust, or omit crust completely. (Almond flour works well in GF pie crust)
