Dark Chocolate-Cranberry Cookie Balls

These cute cookie balls are a good example of a kitchen experiment that didn’t turn out quite as expected. My intention was to bake cookies, but considering that these treats look more like balls than cookies, I have no choice but to compromise and call them cookie balls. Such is life.

Chocolate-Cranberry Cookie Balls

1/3 cup olive oil
2/3 cup packed brown sugar
2 tablespoons chia seeds
1/2 cup water
1 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon ground cinnamon
3/4 cup whole wheat flour
1 cup rolled oats
3/4 cup wheat bran or oat bran
1/2 cup dark chocolate chips
1/3 cup slivered almonds
1/3 cup dried cranberries
 
In a medium bowl, combine the water and chia seeds. Set aside, and allow to rest for at least ten minutes. Next, whisk the chia mixture to loosen the “globs” that will form. Continue to whisk and add the olive oil, vanilla, baking powder and cinnamon. Stir in the flour, oats and bran until dough is moistened. It will be very crumbly. Stir in the chocolate chips, almonds and cranberries, form into small balls and bake on a greased cookie sheet in a 350-degree oven for 15 minutes. Cool on pans and store in an airtight container.
