Apple-Pumpkin Cake

Apple-Pumpkin Cake
1 cup pumpkin
2 medium red delicious apples, chopped
¼ cup canola oil
½ cup brown sugar
1 cup whole spelt flour
1 cup all-purpose flour
2 eggs
2 tsp vanilla
½ cup milk
1-1/2 tsp cinnamon
¼ tsp salt
¼ tsp nutmeg
1/8 tsp ground cloves
1/8 tsp ground ginger
2-1/2 tsp baking powder
Preheat the oven to 350-degrees. In a medium bowl, mix the eggs, milk, vanilla, brown sugar, pumpkin and canola oil very well. Set aside. In a large bowl, whisk together remaining ingredients (excluding apples). Pour the wet mixture all at once into the flour mixture and mix until batter is just moistened. Fold in the chopped apples, pour into a greased 8×8 pan and bake for 45 minutes.
Cool for 30 minutes before serving.

I found that it tastes even better when served with peanut butter
