Over here, we like us some pie.

We like pie so much that it’s a rare occurrence when we don’t go back for seconds.

Simple Blueberry Pie:
1 unbaked gluten-free pie crust (I used a slightly freezer burned, non-gluten-free Pillsbury one)
3 cups of blueberries, fresh or frozen
2 tablespoons cornstarch
3 tablespoons lime juice
4-5 tablespoons brown sugar
Pour the blueberries into the pie crust. In a small bowl, mix together the cornstarch and lime juice until thoroughly combined and drizzle over blueberries. Sprinkle the brown sugar evenly over the top and bake in a preheated 375-degree oven for one hour. Cool to room temperature and serve.
