Blueberry and Wheat Muffins
1 cup whole wheat flour
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/3 cup almond oil (or olive oil)
about 1/3 cup dairy-free milk
1 teaspoon pure vanilla extract
2 cups blueberries
Combine the flours, baking powder and salt. Mix well. Add the oil, vanilla and egg to a 1-cup measuring cup. Add enough milk to fill the cup and mix well. Pour the egg mixture all at once into the flour mixture, stir until batter is just moistened, fold in blueberries and spoon mixture into 8 muffin tins, filling all the way to the top! Bake in a preheated 400-degree oven for about 25 minutes, or until a toothpick inserted into the center comes out clean and tops are golden. Cooking time may vary. Cool completely in pans. Store covered, at room temperature for 2-3 days or freeze for one month.
