Earthy grains provide so much more than wholesome nourishment for our bodies. They boast a rich, full flavor, chewy texture and in a sense, they reconnect us with our ancestors who relied on them for sustenance.
For whatever reason you choose, make an effort to enjoy food in it’s natural, whole state a bit more this summer. Whether you crave the nutrients, enjoy the flavor or strive to live and eat simply, whole grains are an excellent choice.
The basic foods that fueled our grandparents will also feed our children.
Strawberries ‘n’ Cream Oatmeal Cookies1 cup unsalted butter, softened 2 eggs 2 teaspoons almond extract 1 cup brown sugar 1 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 2 cups whole wheat pastry flour or gluten-free oat flour 2 cups gluten-free rolled oats 1/2 cup chopped, unsulphured dried strawberries 1/2 cup chopped walnuts (optional) sprinkle of cinnamon Preheat oven to 350 degrees In a medium bowl, cream butter and sugar. Add eggs and almond extract, and mix for about 1 minute on high. add baking soda, baking powder, salt, and cinnamon and mix for 1 minute longer. Mixing on medium speed, add flour, 1/2 cup at a time, until thoroughly mixed. Stir in oats, walnuts and strawberries. Drop teaspoonfuls onto an ungreased cookie sheet. Bake in the preheated oven for 10-12 minutes, remove from oven onto a wire cooling rack. Store cookies in an airtight container for up to 1 week. Makes 2 dozen cookies
