Hello lovely bloggers! Gosh, it has been a while! I am such a bad blogger! haha!

Well this week I am finally on spring break! It has been very busy so far! On Friday I went shopping with my family, Saturday I had work for 5.5 hours and on Sunday I ran (a six-miler!) visited my grandma and spent the night at my sister’s apartment! I got got home Monday morning and spent the evening with one of my best friends, and today was filled with appointments and errands! Tomorrow I will finally have time to relax! I am exhausted, but it has all been in good fun. 🙂

Since I know you’re dying to see more oatmeal pictures, here are some delicious breakfasts from the past week:

mango/goji berries/pistachios/crystallized ginger

caramelized pear/currants/white chocolate wonderful pb

banana/pistachios/dried fig/sun butter

I am obviously obsessed with oatmeal. It is my breakfast of choice almost every day! I love it because it is so nourishing, it’s warm and filling, and there are so many endless options. Whenever someone tells me that they don’t like oatmeal, I simply reply, “Well, you obviously make it wrong…” 🙂

Today at my favorite grocery store I made some amazing finds! Among them are PB&Co’s Cinnamon Raisin Swirl peanut butter, Justin’s Nut Butter packets, some new bars, like the Macro, and Turkish figs, which i have never tried! I have only ever had the blackish-purple kind, and these are very light!

For dinner I made some delicious Southwestern Burgers!

For the patties, I simply mixed 2 lbs extra lean ground beef with 1 can black beans, 1 can diced green chilies and 1 packet Gluten-free “burrito/fajita seasoning” and formed into patties. I cooked them on a grill pan, blotted off the extra grease, and served on a high-fiber English Muffin with spicy mustard, cool avocado, romaine and grilled asparagus! You could easily sub 1 tbs cumin, 1 tsp chili powder and 1/2 tsp salt for the seasoning mix.

My favorite sandwich, Peanut Butter and grated Carrot crisped up in the George Foreman, with cheesecake dipping sauce and an apple!

The infamous Bunny Bar, take two! The squeaky cheeky chocolate cherry flavor was deliciously sweet and definitely chocolatey! I loved the addition of sunflower seeds to this bar as well. Again, it was very dense and hard to chew, and lacked cherry flavor but I still give it an “A”

Homemade Vanilla-Almond Granola!

Chicken, broccoli and sweet potato, all smothered in roasted almond butter, with cinnamon/clove! This is a favorite dinner combination of mine! It’s so easy and so flavorful!
