Well my Saturday Morning Physics Class is over, and unlike last week, I didn’t have an academic bowl meet this morning. That means I was finally able to sleep in a bit!
After catching some much-needed zzzz’s, I woke up to one of my favorite breakfast combos: rolled oats cooked in milk, with banana, currant raisins and almond butter! With Lipton Lemon Tea on the side. T’was divine!
Well, the second week of my 1/2 Marathon training is coming to a close — and tomorrow I will increase mileage again! I will run 5 miles on Sunday, 3 on Tuesday, 2 on Thursday, with biking and yoga in between. Then next week I will increase again to 6 miles! It doesn’t seem like a lot, but I’m really focusing on building speed endurance. My goal for this race is 1:44:00, which is nearly 11 minutes faster than last year’s time!
My lunch was equally as delicious as my breakfast, if not moreso! I felt like a total eco-freak while eating it though! My lentil salad was served in a flower pot and I sipped sparkling Orange La Croix from a recycled Apple Butter Jar.
The spicy/sweet lentil salad was to die for! I love the combination of spicy and sweet! I used 1/4 cup of dried lentils, boiled with 2 chopped sundried tomatoes. Afterwards, I stirred in 1/3 mango, chopped, 1/4 avocado, cubed, 2 tablespoons toasted sunflower seeds, cardamom, black pepper, garlic powder and caraway seeds. It was amazing!
Look at those beautiful spring colors! One of my favorite aspects of spring/summer is the brightly colored, fresh food! I think a trip to Whole Foods is in store! The closest Whole Foods to me is about45 minutes, and I don’t have an excuse to travel 45 minutes for groceries. It’s kind of a springtime ritual — so I am so glad the weather is warming! I ♥ Whole Foods!
Well blogees, now I’m off to pick out a 6-month belated birthday present from my wonderful parents: a new bike! I’m going all-out with this one! It’s going to be a really nice one with hybrid tires, but lightweight, like a road bike. I’m super excited! I’ll be sure to post pictures later!
