Chobani “Perfect Pancakes”

This weekend, I had a mission:

To make and review Chobani’s “Perfect Pancakes.”

However, when push comes to shove, it is impossible for me to follow a recipe to the “T” but I swear, I did my best.

These delicious apple cinnamon pancakes are deliciously thick, brimming with flavor, and just plain good.

The recipe is very closely based off of Chobani’s Recipe located here.

This recipe involves delicious, nutritious, super fresh ingredients,

My all-time favorite flour,

It involves a little sifting,

A little pouring,

A little mixing,

and a little magic. ♥

Perfect Pancakes a la Chobani

1-1/2 cups whole spelt flour

3/4 teaspoon baking powder

1/2 teaspoon cinnamon

1/2 teaspoon salt

6 oz 2% Plain Chobani

6 oz 0% Vanilla Chobani

1/2 teaspoon vanilla extract

1/2 cup plain soymilk

1 egg

1 Gala Apple, grated

The method:

In a large bowl, sift together the flour, baking soda, salt and cinnamon.

In another bowl, whisk together the egg, vanilla and soymilk. Add the yogurts and mix until smooth. Add the yogurt mixture to the wet ingredients all at once, and mix just until combined. Stir in the grated apple.

Spoon batter onto a preheated skillet, and cook for 45 seconds on each side until golden. Serve with plain Chobani and maple syrup.
