Coconut Rice and Food Review: Artisana Raw Coconut Oil

Coconut Rice is a delicious summer side dish. The fresh, fun flavor is perfectly comforting on a cool summer evening.

I loved the coconut oil. Its rich, fragrant flavor completely transformed the coconut rice and brought the flavors together perfectly. Coconut oil has incredibly health benefits, which are even greater when the product is in its raw form. Again, I love the words at the bottom: “For Food, Body and Love.”

However, the coconut oil came in a small packet. Although it was the perfect size for my coconut rice dish, it might not have been as perfectly portioned for another dish, such as Energy Bars. Nut butters in packets is a great idea, but I don’t see the need for coconut oil to be portioned into packets.

For the Coconut Rice:

In a large saucepan, heat 1 packet of coconut oil, or about 2-3 tablespoons. Add 1/2 minced yellow onion and 2 cloves of minced garlic. Cook for 3-4 minutes over medium heat.

Add 1 cup of brown rice and 1/4 cup of unsweetened coconut flakes.

Cook for another 3-4 minutes, until rice is toasted and lightly browned.

Add two cups of water or chicken broth, and 1/4 cup of coconut milk. Bring mixture to a boil, then cover and reduce heat to low. Simmer for 30-35 minutes until liquid is absorbed, stirring occasionally. Add freshly ground black pepper and sea salt to taste.

Remove from heat, fluff with a fork and serve.
