Bean and Quinoa Burgers

One of the reasons I love summer is because of the food! There’s nothing better than a warm evening with a good, healthy, hearty meal!

Bean and Quinoa Burgers with Greek-Style Yogurt Sauce

The Method:

In a small sauce pan, combine 1/2 cup rinsed quinoa with 3/4 cup water. Bring to a boil. Cover, reduce heat, and simmer for 12-14 minutes until liquid is absorbed.
Drain and rinse a 16-oz can of Pinto Beans
Cut a medium, peeled carrot into chunks
Grind the carrot in a food processor. Add 1/4 cup rolled oats, 1/4 teaspoon black pepper, 1/2 teaspoon salt, 1 large egg, and a clove of garlic
Add 1 tablespoon of ground cumin, 2 tablespoons of chopped chives, the beans and the quinoa. Process until combined, but still chunky.
It should look somewhat like this
Separate the mixture into equal parts and chill in the refrigerator for 15-20 minutes. I did 4 parts, but I recommend doing 5 or 6
Flatten the portions into rounds, and cook on a large nonstick skillet, sprayed liberally with cooking spray. Cook for 8-10 minutes on each side.

Serve with a sauce made from plain yogurt, salt and pepper.
