Curried Shrimp with Quinoa

Not particularly picturesque, but ridiculously delicious!

The Method:
Boil a chopped apple in white wine until tender.

Then add two chopped carrots

A sliced onion, and two cloves of garlic.
Continue cooking until tender.
Throw in some sugar-snap peas, and a can of diced tomatoes, drained and rinsed.
And, a whole bunch of spices!
(Cumin, nutmeg, turmeric, ginger, crushed red pepper, cilantro, garlic powder, black pepper..)
And the superstar…
Curry!
(organic, please!)
Add some ketchup, lime juice, unsweetened coconut flakes, and some grated Asiago Cheese.
Then throw in about a pound of raw, deveined and peeled shrimp.
Cook for 2-3 minutes until shrimp are completely opaque.
In the mean-time, cook up some Quinoa!
(Bake 1.5 cups of Quinoa with 3 cups of water in a 375 degree oven for one hour, tightly covered with aluminum foil)
Serve immediately.
