Balsamic-Glazed Salmon with Walnut Topping
After a hard day of anything, there really is nothing better than a hot, home-cooked meal.
Sweet Balsamic-Glazed Salmon, Steamed Broccoli, Brown Rice, Fresh Tomatoes, and Cubed Acorn Squash.
Preheat the grill, and combine 1/5 cups rice with 3 cups of water in an 8×8 baking dish. Cover tightly with aluminum foil and bake in a 375 degree oven for 1 hour.
For the Balsamic Glaze, combine about 3 tablespoons of spicy brown mustard with 2 teaspoons of honey and 3 tablespoons of balsamic vinegar.
Add a few tablespoons of fresh lemon juice, too.
Next, whisk in some dried oregano, fresh black pepper, and lots of garlic powder.
In a separate bowl, combine a few tablespoons each of grated parmesan cheese, chopped walnuts, and bread crumbs. Set aside.
Lightly spray a foil-lined grill-pan with olive oil. Lay down the salmon filets, and cover lightly with another sheet of aluminum foil.
Grill for 3-5 minutes.
Brush the glaze on both sides of the partially cooked fish. Grill on the original side for another 3-5 minutes, then top with the walnut mixture, and continue to cook until opaque and flaky, but still moist and tender.
Steam some vegetables, or slice them up fresh, for healthy, delicious, colorful sides.
