Sweet Potato, Onion and Pear Succotosh with Cashews and Tahini Drizzle

My daddy bought fruit! Isn’t it beautiful? And since I was already planning on having a sweet potato for dinner, I decided to add some zing via fruit! Yum!


Chop up one small sweet potato, 2/3 of a D’anjou pear and about 1/10 of a large yellow onion, or 1/2 thick slice.

In about 1 cup of salted water, dissolve 1 teaspoon of garlic powder, and boil the sweet potato for about 6 minutes, or until they are cooked to your satisfaction. Drain, reserving 2 tablespoons of the water.

Then spray the same pot with a bunch of Pam, and lightly sautee the onions and about 1/2 clove of minced garlic. When they just start to brown, add the pear and some of these spices:


Then roughly chop about 1 tablespoon of cashews (give or take a little) and a handful of spinach. (chop the spinach very well)

When the pears have turned golden, add the spinach, and cook until slightly wilted, then add the potatoes and reserved cooking liquid. If you need more moisture, or want more flavor, add 2-4 tablespoons of dry white wine. Heat thoroughly. (boil for at least 3 minutes if you add wine)

Pour it all into a bowl, drizzle on a little Tahini, if you like, and top with the cashews!
