Spiced Sweet Potato with Raisins and Walnuts

Here it is. The infamous sweet potato — so well known for it’s immense nutrition. They’re high in fiber, vitamins, carotenes, and, best of all, FLAVOR!

How about a spicy, fulfilling meal that incorporates the flavors of autumn, winter, and the holidays! Perfect for a rainy or snowy day, this comforting dish is delicious, and nutritious.

First, boil about 1.5 cups of water in a saucepan. Add 1 teaspoon of salt and 1 teaspoon of garlic powder. Stir until dissolved.

Then, wash a medium sweet potato, and cut it into 3/4 inch cubes. (leave the skin on) Drop the cubes into the boiling water, and boil for about 10 minutes, or until tender. Using a slotted spoon, lift the potatoes out of the water and into a bowl. Discard the water.

Sprinkle on a few chopped walnuts…

A couple raisins…

And shake on a little cayenne pepper…

And ground cinnamon…

And best of all, some ground ginger!

Spiced Sweet Potato with Raisins and Walnuts:
1 medium sweet potato
1.5 cups water
1 teaspoon garlic powder
1 teaspoon salt
6 walnuts, chopped
1 tablespoon raisins
1/4 teaspoon cayenne pepper
1/4 teaspoon cinnamon
1/4 teaspoon ground ginger
