Mini Crust-less Vegan Quiches

I am not a vegan (or even a vegetarian) but I fully appreciate the healthfulness of vegan and vegetarian foods, and the fact that many of them yield immense nutrition, like these mini crust-less vegan quiches!

First things first: If you do not already have one of these magnificent contraptions, you really should get one. They are SO worth investing in! They make chopping significantly easier, and in a fraction of the time!


Mini Crust-less Vegan Quiches:
1 cup chopped mushrooms
1/2 cup chopped bell pepper
1 tablespoon minced chives
1 teaspoon minced garlic
freshly ground black pepper
1/2 teaspoon rosemary12.3 ounces Lite Silken Tofu (they come in 12.3 ounce packages)

1/4 cup soy milk (or skim milk)
2 tablespoons nutritional yeast (or Parmesan Cheese)
1 teaspoon Tahini (or cashew butter)
1/2 teaspoon salt
1/4 teaspoon ground turmeric
1/2 teaspoon onion powder
1 tablespoon cornstarch

Mix ingredients, spoon into muffin tins, and bake at 375 degrees for 25-35 minutes.
